The Ph.D. thesis (tutor prof. Marco Gobbetti, co-tutor Dr. Vincenzina Fusco) was discussed at the Faculty of Agriculture, University of Bari, Italy on May 17, 2010. The thesis title is “Quality, safety and traceability of fermented foods: development and application of advanced methods to identify and quantitatively detect microbial markers”. The research activities of this Ph.D. thesis were carried out at CNR-ISPA under the supervision of Dr. Vincenzina Fusco.
