The 5th International Symposium on Recent Advances in Food Analysis (RAFA 2011) was held from 1st until 4th of November 2011 in Prague, Czech Republic.
The symposium brought together scientist end experts to present and to discuss the latest advances in analytical technologies, bioanalyitical technologies and emerging food applications for allergens, GMO, industrial contaminates, organic foods, and many others.
The DREAM project researchers have presented at the symposium their latest research outcomes about specific toxic secondary metabolites (DON, T-2,HT-2) of Trichothecenes.
Researchers investigated the level of these compounds during bread-making. The survey outcomes show two important findings: confirmation of already known facts obtained from other studies and the new research findings about the behavior of T-2 and HT-2 in the cereal food chain.
