The 6th international Central European Congress on Food will be held from 23rd until 26th of May, 2012 in Novi Sad, Serbia.
The event will bring together numerous food and nutrition scientists, researchers, technologists, young scientists and students to present their work and exchange information about the ongoing novelties.
At this occasion the DREAM “food models” project will be presented as well. One contribution will illustrate the scope of the project; meanwhile the second one will present the recent finding from R&D and about the method development for detection of carbonylated proteins due to heating.
The full title of the contribution, lecture, which will present project, in general is: DREAM - Design and development of REAlistic food Models with well-characterised micro- and macro- structure and composition.
The authors are: Peter Raspor (UL-BF), Lidija Baša (UL-BF) and Monique A.V. Axelos (INRA, France).
The R&D contribution, poster, full title is: Food processing can impair proteins in meat: detecting the protein carbonylation due to heating.
