Abstract
The European Framework Programme 7 project Design and development of REAlistic food Models with well-characterised micro and macro-structure and composition (DREAM) started on 1st May 2009. The project is dealing with food modelling (mathematical and physical modelling approach) with the purpose to in-depth understanding of the process-structure-property relationship of food and to facilitate the creation of food matrix with well known functional and nutritional properties. The outcomes of the project will result in industrial, technological and scientific level. The general purpose of the DREAM project is to support the strive after more consistent food quality and safety. To achieve that, the work frame of DREAM project covers both the development of modelling techniques and the models applicability in the food industry.

Načrtovanje in razvoj modelov živil na osnovi poznavanja njihove mikro- in makrostrukture ter sestave (DREAM) je evropski projekt sedmega okvirnega programa, ki se je začel 1. maja 2009. Projekt obravnava modeliranje živil (matematični in aplikativni pristop) katerega namen je poglobiti razumevanje odnosa med procesiranjem, strukturo in karakteristikami hrane in s tem prispevati k razvoju matric živil z dobro poznanimi funkcionalnimi in prehranskimi lastnostmi. Rezultati projekta bodo pomembni za industrijo, tehnologijo in znanost. Osnovni namen projekta je stremljenje k večji kakovosti in varnosti živil. Da bi dosegli premik v želeni smeri, projekt DREAM združuje oboje, razvoj modelov živil kot tudi njihovo uporabnost v živilski industriji.
