The DREAM Project`s International Conference "From Model Foods to Food Models" was held from 24th until 26th June 2013 in Nantes, France.
The main aim of the conference was to present R&D results developed under DREAM Consortium and to answer one of the main questions: How can consumer demand for safe, high quality food be supported by developing modelling approaches?
In order to find this answer the conference addressed scientific topics dealing with food process-structure relationships, food structure – function relationships and food modelling topics. Lecturers managed to illustrate the conceptual approaches in modelling, its applicability in research & development environment as well in the real industrial environment. On the last day of the conference the scientific topics were wrapped up and future debated within round table discussion. There were two round tables covering completely different aspects. The first round table was opening the debate about how to promote use of the models meanwhile the second round table was about the multi-criteria modelling approaches for sustainability. Discussions raised interesting questions attached to food models, regarding user benefits (food industry), developers and education, marketing system and support, regulatory authorities and consumers. Interesting remarks and comments were also referring to the need of multidisciplinary approach.
Lectures and round table discussion shaped the main conclusion of the conference. Modelling is essential step in current development and upgrade of the current food production, processing and distribution system. But to achieve a successful development and its implementation the multidisciplinary approach is essential.
