The master degree thesis in Biotechnologies for the Quality and Healthiness of Nutrition (tutor prof. Maria De Angelis, co-tutor Dr. Vincenzina Fusco) entitled "Studio della sopravvivenza di microrganismi probiotici e patogeni in alimenti modello" ("Assessment of the behavior of probiotic and pathogenic microorganisms in realistic model foods") was discussed at the Faculty of Biotechnologies, University of Bari, Italy on July 17, 2013.
The thesis as well as the lecture include activities performed by CNR-ISPA in WP6 Task 6.4.1 relevant to the assessment of the growth of L. monocytogenes in raw and cooked cabbage (WP3) and of Listeria monocytogenes and probiotic Lactobacillus paracasei strain in WP4 dairy dessert.
The research activities of this thesis were carried out at CNR-ISPA under the supervision of Dr. Vincenzina Fusco.
